Veggie Scramble w/ Avocado Toast

This meal is easy, pretty, delicious, and super filling.

Veggie Scramble w/ Avocado Toast

Prep Time: 10-12 minutes | Cook Time: 7-9 minutes

Yum, okay. So what did we put in this? 

Ingredients

  • Eggs
  • Tomato
  • Onion
  • Capsicum (Green Pepper)
  • Broccoli
  • Bread (We used Rye Sourdough - highly recommend)
  • Avocado
  • Lime
  • Pink Himalayan Sea Salt & Pepper (Okay, so you can obviously use regular salt but highly recommend getting some Pink Himalayan and carrying it around in your bag. Seriously.)

The great thing about these ingredients as well, is they're ingredients you can use in everything so are great to have around anyway!

But that's it, just scramble your eggs with the cut-up veggies. Smash that avocado around adding the salt, pepper, and lime and spread it on top of your perfectly toasted bread. Better than eating just plain scrambled eggs and also better than eating just toast/butter - and all it took was a few extra minutes to cut the veggies and smash the avo.

If you're really new to cooking and literally don't even know how to scramble eggs, don't worry. That was me a few months ago. You do exactly what it sounds like - pour the eggs onto a pan and literally just move them around with a spatula until they look like scrambled eggs. It takes all of four minutes.
