Vegan Burrito Bowls

Okay another super easy meal to make, which is kind of the point of these. We are not chefs by any possible stretch of anyone's imagination, we just want to give you ideas of easy things you can make with simple ingredients that are also delicious (and usually pretty healthy).

Vegan Burrito Bowls!

Prep Time: 10-12 minutes Cook Time: 15 minutes

Obviously you can put whatever veggies (or meat if you so desire) in this you like but we used:

  • Capsicum (Green Bell Pepper)
  • Zucchini 
  • Corn
  • Black Beans
  • Rice
  • Guacamole 
    • Avocado
    • Onion
    • Tomato
    • Lime
    • Pepper
    • Pink Himalayan Sea Salt
  • Cumin, Chili Flakes (or whatever spices you have laying around really)

There you have it, your very own delicious burrito bowl. Cooking instructions for people who truly don't know how to do anything in the kitchen (aka me) - cook the rice just like you would pasta for 14 minutes, cut up all your veggies and cook them on a pan with a tiny bit of olive oil and whatever spices you have. Oh also don't forget to boil the corn as well (unless you bought canned corn then you don't have to do that). Put them together and top it with the guacamole. Yum! You never have to buy a burrito bowl for $12 ever again, although you will.
